The official dish is Herring and potatoes and in the old days they used to put a sort of bread around the Herring, named "strömmingsstrut".

Another famous dish with Herring is "sotare" - barbecued Herring. Other specialities of Hälsingland is the so called "ovanåkersbröd" (a thin unleavened bread) and "ostkaka" ( a sort of sweet cheesecake).
